Roast Pork Loin with Brussel Sprouts and Mac&Cheese

So I just went to the store this evening and picked up a twin pack of pork loins. This is how they turned out:

Dry Rub

To season the pork, take it out of it’s packaging and dry it off with a paper towel. In a bowl mix:

  • 2T Kosher Salt
  • 2T Garlic Salt
  • 1T Paprika
  • 1T Oregano
  • 1T Rosemary
  • 1T Thyme
  • 1/2T Cardamom

Take the mixture and rub it over the entire pork loin just like a crust. Once you are finished, place the loin in the oven at 375 until the internal temp is 160. (~30-40min) I dont like to time my meats, I always go by temp.

The brusel sprouts were frozen and were microwaved for 6 min and the mac and cheese was fresh from the store pre-packed. I just heated it up on the stove. Let me know what you think!
