Spices, spices, spices… I have grown up around spices and flavors my whole life. I never really payed attention until I overheard an episode of 30 Minute-Meals with Rachel Ray. I don’t remember the specific episode but she described rosemary as “Citrus” and nutmeg as “Earthy”. She was explaining how pairing some spices with specific foods can make or break a dish. This peaked my interest and led me down the path I am on today.
When I first discovered the power of spices I experimented with a lot of different and exotic flavors. I applied them to all kinds of different foods. I would add paprika to Mac & cheese, oregano and rosemary to eggs, herbal tea to steak, cinnamon and cayenne pepper to corn, and all types of random flavors to anything I felt needed a kick of flavor. I was writing things down trying to find great flavors. I was making a by hand version of McCormick’s FlavorPrint. I’m not affiliated with them but I would recommend poking around there, their suggestion engine is pretty good.
One day my wife wanted steaks, I went to the local super market and picked up some ribeye steaks. Going back to the flavors I was playing with I decided to try a basic rub and it was awesome! I have a rub recipe that I am keeping to my self but this recipe is similar to how I started. Feel free to take this and experiment on your own, it’s about finding the flavors you like. The amounts given are meant for a single portion, feel free to use more for larger quantities.
So first off you are going to need:
- A small mixing bowl
- Measuring spoons
- A microplane
- A whisk
Now for the rub:
- 1Tbsp Kosher Salt
- 1Tbsp Cracked Black Pepper
- 1Tbsp Rosemary
- 1Tbsp Basil
- 1Tbsp Oregano
- 2 Tbsp Paprika
- 1 tsp Cumin
- 1 clove of Garlic
Mix thoroughly and this is what you will have.
Make sure you Always Rub Your Meat!
