Oh yummy yummy pork. How I love thee… let me count the ways. Bacon, Ham, Pulled, Chops, and Loin. Today I am going to focus on some pork chops. We shall make some stuffing and jam that into a super think pork chop.
We are going to start with some stuffing. Around Thanksgiving I will post about home made stuffing but for tonight lets just use some good ol’ fashion boxed stuffing. Mix that up via the instructions and set it aside.
Now lets start with a 3 to 4 inch chop. First things first… Alway rub your meat! Use a rub or a 50/50 salt and pepper mix. Now normally we would cut a chop like a steak and cook it on it’s side, but for this one we want it standing up. Make a substantial cut on the top about 3in long and going about half way into the chop. Take a chunk of the stuffing and fill’er up!
Light up the grill or use a cast iron skillet and sear on both sides. If using the cast iron, throw it into the oven at 350 for about 30 min or until the pork is about 145 degrees. Yes 145… read about it here
