Salmon is such a great fish. You can cook it just about anyway you like. Today we’re doing a good old-fashioned barbecue salmon! This is a quick and simple one.
What you will need:
- Salmon steak (Skin on)
- Quick Fish Rub
- BBQ Sauce
Quick Fish Rub:
- 1 tsp Rosemary
- 1 tsp Kosher Salt
- 1 tsp Black Pepper
- 1 tsp Basil
- Cardamom (To Taste)
First start by making the rub. Use equal amounts of everything except the cardamom, it’s strong. The cardamom and rosemary will add a nice citrus flavor which goes well with fish.
Rub that all over your fish. Give the fish a quick sear on the coals and then continue to cook it until it is no longer translucent.
You can add sauce to it while cooking if you want or you can have it on the side. I love cooking it on the fish because it starts to caramelize and gives a nice flavor.
I would recommend some asparagus as a side to this and maybe even a little wine.
